With an an egg white and tea.
Simple snack of veggies, romaine and hummus avocado dip (unpictured). I also like to make a savory goat’s milk yogurt dip (with yogurt, lemon juice and sea salt + fresh pepper).
Lunch is always a freshly chopped salad that I pack each morning. I’ve been making homemade dressing (salsa mixed with hummus or avocado – try it its so good) packed separately. I like to add toppings of whatever appeals to me at lunch time like trail mix or rice crackers.
Dinners have been really good lately since I’ve been using the veggies I roasted from my Sunday food prep (zucchini, red onions, beets and tomatoes)
And tossing them with tofu or eggs to make a quick stir fry, and serving it with an asian or balsamic dipping sauce.
Desserts are also not pictured but have included apple slices, frozen bananas and yogurt mixed with a bit of honey and walnut pieces.

Breakfast is my favorite meal of the day. I generally eat a light and early dinner so I’m usually starving when I wake up. I go through phases with my favorite breakfast foods, I always have fresh seasonal fruit in the mix..
I was really into protein pancakes for a bit..
But lately I’ve been really into my berry apple “cereal” bowls. It’s simple fast and delicious.
1 organic apple
1/2+ cup frozen blueberries
1/4 cup nuts or seeds (optional)
1 cup favorite vegan milk
Chop apple into cubes. And put into a bowl with blueberries. Pour your milk over the fruit and sprinkle with your favorite nuts and seeds. That’s it! I’m a cereal lover so this gives the feeling of having a bowl of your favorite cereal without the glycemic spike. I usually have this with some yogurt or an egg white on the side.
Don’t worry if your milk turns purple, it’s delicious that way:).

I haven’t had the baking bug in awhile but since meeting my current boyfriend (who just loves to eat), I’ve been inspired to bake him healthy treats to enjoy and take on the go.
Sweet summer corn muffins (gluten-free)
1/2 package Bob’s gluten-free cornbread mix
1/3 cup arrowroot flour
1 large egg + 1 egg white
3/4 cup almond milk
1 +1/4 cup fresh cut corn
1/4 cup finely diced sweet potato
2 Tbls diced sundried tomatoes
3 T fresh julienned basil
Mix all ingredients except for 1/4 cup of fresh corn in a big bowl.
Scoop into paper lined muffin pan.
Sprinkle fresh corn, paprika or other herbs on top for a nice fragrance.
Enjoy with a loved one!
Biting into the muffins, they’re soft fluffy and bursting with sweet corn..A delicious savory bread to enjoy alone or with a summer salad.

At yoga yesterday, our teacher reminded us during a particularly hard pose, “remember that the quality of your breath controls the quality of your mind..” I always forget how simple it is to bring calm, perspective and peace to the moment by simply breathing slower and more intentionally. Lately I’ve been feeling inexplicably fatigued and skipping my morning yoga and workout routine – I’m really feeling the negative effects. I have to remind myself that exercise brings in more energy and allows me to live my day in a much better way. Lately I’ve really been enjoying myyogaworks.com online streaming subscription ($5 for Yogaworks members!). It features so many of my favorite teachers from my old studio on Montana street in Santa Monica- lately it’s my favorite way to start the day. Today was a really stressful day at work…it seemed that we barely stopped working all day, managing difficult patients and staff, it really felt endless. I wish I remembered this little piece of advice! Breathe.
Lately with the incredibly hot and (humid!) weather we’ve been having in orange county, all I’ve been wanting are…salads all the time. Below are some of my lunches & dinners. Since I prep all my veggies on Sunday, salads are a breeze and I have a healthy meal in 5 minutes or less. For lunches I like to top my salads with trail mix or hummus, and if I’m at home I’ll grill fish or a vegan protein like tofu, chicken or veggie burger.

Something to think about I loved this post about the time we spend consuming vs. creating in life, and how trying to tip the balance in favor of creating, can increase our happiness and satisfaction. I definitely fall into the hole of bloglovin’ pinterest instagram tumblr..and sometimes an hour or more will go by, and I’m not sure I gained anything from drying out my contacts staring at my phone screen. I dusted off this blog today, in an attempt to utilize my online time in a more creativity sparking and non-consumerist way:). Baby steps.
Beautiful I’m definitely late to discover this blog, but I’m completely in love with her style, joie de vivre and her images are gorgeous. Lately I’ve been so hungry right when I wake up, and have been enjoying hearty well-rounded breakfasts. My breakfasts have always start with berries – strawberries & blueberries are my favorite way, along with a hot jasmine green tea. I’ve also been having cinnamon topped sliced apples or bananas with a protein quinoa pancake and sometimes a little goat yogurt & honey on the side. A simple, delicious and satisfying way to start the day. For lunches, I’ve been having a vegan soup or a salad with trail mix or rice crackers as a topping or with a side of hummus. My lunchtime usually involves a fresh salad that I brought from home, and an iced green tea on the side to power me through the afternoon. This lunch was a vegan carrot soup from Le Pain Quotidien which is one of my favorite lunchtime spots. Dinners are whatever I’m craving, but just a small portion since I get home after Barre class, past 7-7:30. Lately it’s been roast or sauteed vegetables with quinoa and eggs. I also usually have a piece of fruit and some trail mix for dessert. I generally keep my dinners vegan, since the thought of going to sleep with meat still digesting in my stomach, kind of grosses me out. Dinners are healthy only because I do all my fresh veggie, protein/grain prep on Sundays, otherwise I’d probably have only enough energy to eat something out of a package! More WIAW posts here. Today’s agenda: Office checklist, errands, 12 pm yoga, green juice/cafe to finish some work, 4:30 barre, dinner. Have a wonderful productive day🙂.
